Red Walnut Chocolate Chip Cookies
A chewy and nutty take on the classic chocolate chip cookie! If you don't want to bake all 36 cookies, roll the remaining dough in parchment paper and freeze to slice for future use.
Ingredients Serves 36
3 1/3 cup all purpose flour
3/4 tsp baking soda
1/2 tsp salt
8 oz softened cultured butter
1 1/4 cup evaporated cane syrup
1/2 cup white refined sugar
3 whole eggs
1 tbs vanilla extract
1 cup dark chocolate chips
1 cup chopped red walnuts
Preheat oven to 350 degrees and line two baking sheets with a silicone baking sheet or parchment paper.
Combine flour, baking soda and salt in a large mixing bowl. In a medium bowl (or the bowl of a kitchen aid mixer) cream together the butter with the two sugars using an electric hand mixer until light and fluffy, about 2 minutes.
With the mixer on low, incorporate the eggs one at a time, waiting until the previous egg is completely incorporated then add the vanilla. Add the dry ingredients in thirds, mixing on low speed.
Fold in the chocolate chips and walnuts, taking care not to over mix. Form balls of about 2 tbs of dough and place 2 inches apart on line baking sheet.
Bake for 18-20 minutes, rotating halfway through baking, or until lightly golden brown and delicious.
Transfer to a cooling rack and enjoy!
